Congris and Lechon is the typical meal Caribbean Hispanic’s (Puerto Rico, Cuba, and Dominican Republic) typically have on Christmas and New Year’s Eve. This particular platter also has avocado (one of my favorites), yuca, Russian salad (a salad made with potatoes, mayonnaise, bits of apple, pieces of boiled egg whites, radish, and some other stuff, but oh so good, its served cold by the way). All and all, a very tasty meal to wrap up and begin a new year.
